Easiest Muffins Ever
Kirstie celebrated her birthday at school yesterday and here's what I came up with for the occasion- some uber simple muffins! The wonderful thing about them is that you can add just about anything to the recipe (nuts and chopped chocolate come to mind, of course), or even omit the chocolate and add citrus zest or maybe even dried fruits. The kids seemed to like theml. Out of the 35 muffins she took to school, a mere four came back. I'll be bringing them to work tomorrow for the first hungry kids who show up at my desk... Here's the recipe: Simple Chocolate Chip Muffins Makes 12 250g flour 2 tsps baking powder 1/2 tsp baking soda 2 tbsps good quality cocoa 200ml full-fat milk 1 egg 150g caster sugar 80ml vegetable oil Preheat oven to 200C. Mix the flour, baking powder, baking soda and cocoa in a bowl. Whisk the milk, egg, sugar and oil. Pour over the dry ingredients and mix well without beating. Divide the batter between a 12-hole muffin tin and bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack before serving.
